Pumpkin Oatmeal Muffins--- Ingredients: 2 cups rolled oats (not quick cooking), 1.5 cups milk, 1 cup all purpose flour, 0.5 cup white whole wheat flour, 1 T baking powder, 1/2 t salt, 1/2 t cinnamon, 1/4 t pumpkin pie spice (just use more cinnamon if you don’t have this on hand), 2 large eggs, 1 c pumpkin, 1/2 c honey, 1 t vanilla extract
